Residents at Lincoln House in Swanton Morley near Dereham are keeping their fingers crossed as they wait to hear if their newly designed pudding has been shortlisted in the Queen’s Platinum Pudding competition.
Residents Jean, Danae and Emmy worked with the kitchen team at the home to come up with a new pudding which, if it wins, could be served up at street parties and celebrations during the Queen’s Platinum Jubilee in June 2022, with the creator of the pudding being invited to be at the centre of the celebrations.
The finalists of the competition will be invited to Fortnum & Mason’s in Piccadilly to re-create their recipe for the judges including Dame Mary Berry, Mark Flanagan – Head Chef at Buckingham Palace and Monica Galetti from BBC’s Masterchef programme.
Their recipe is a twist on the traditional Queen of Puddings, a layered dessert of breadcrumbs, custard, and meringue with Victoria plums, replacing the traditional jam or marmalade. Residents at the home have named it The Victoria – Queen of Puddings.
Jean, Danae and Emmy are part of the weekly cookery club at the home and really enjoyed taking part in the competition. They reminisced about their own memories of the Queen.
Jean is very fond of baking and enjoyed making the new pudding which she says tasted very nice. She remembered visiting the Royal Norfolk Show every year with her father and best friend: “I made my own red dress to meet the Queen in person. It was a very hot day and as we’d been waiting in line for so long and my dress had a slightly low back, I managed to get very sun burnt on my back.”
Danae said: “I love to bake and I really enjoyed making our pudding, which tastes so nice! I enjoy watching the Royals on TV and follow the Queen, who is a lovely lady.”
Emmy said: “I enjoyed making the pudding, which was delicious. I think the Queen is beautiful and enjoy following her on television.”
All three ladies agreed that their new twist on an old favourite tastes great and they would love to win the competition!
Jeanette Cruz, Catering and Engagement Manager at Lincoln House said: “We do so many lovely things at our cookery club, so when we heard about this competition, all the residents wanted to enter. We talked about the things we love to eat and came up with something that we hope everyone else will enjoy! Even if we don’t get through to the next stage, we’ve made something that we really like and it’ll definitely be on our menu from now on!”
